When the mixture in the pot is reduced, add more water until the onion is colorless and almost dissolves.
The second step. When you reduce onions, you can remove about 15 medium tomatoes or open a can of Italian tomatoes ready to be peeled. The difference between real or canned tomatoes is small, and my legal mother uses both according to the season. Peel a medium carrot and cut a piece of stewed or fried beef into several medium cubes.
third step. The tomatoes are added to the already reduced onion sauce and the whole carrot is finely ground into a mixture using a cheese grater. Add the beef pieces and a few glasses of water and gently simmer for about forty minutes to an hour. Occasionally stir the mixture and add more water if it is too concentrated. The sauce should be the consistency of the yogurt.
Once the sauce is ready, remove the beef pieces and set aside; they can be eaten later and will be very cute and gentle.
Bring the cooked pasta to a boil, then drain the water and place the spaghetti in the pan. Add the sauce to the pan and mix well. With carefully ground Parmesan cheese and white wine.
