- 2 chayote pumpkin, peeled and cut into 1/2 inch pieces
- 1 onion, chopped
- 3 cloves of garlic, chopped
- 2 chicken soup, crushed
- 2 cups of hot water
- 3 tablespoons chopped fresh parsley with some sprigs for decoration
- 1 tbsp unsalted butter
- 1/4 teaspoon crushed red pepper flakes
- Salt and black pepper sauce
Dissolve the chicken broth in hot water and set aside. In a large pan, melt the butter over medium heat, then cook the onions, garlic and red pepper flakes until soft. Add the pumpkin, 2 tablespoons chopped parsley, salt and pepper. Stir for 5 minutes, then add the dissolved chicken broth and the remaining chopped parsley. Cover and boil for 15-20 minutes. When ready, pour the mixture into the blender and mud until it becomes smooth. Divide the soup into bowls and decorate with the branches of parsley.
