Mexican Pasta Service 4

Ingredients

  • 1 tbsp olive oil
  • 3 green onions, sliced
  • 2 cloves of garlic, chopped
  • 1/2 pound lean beef or turkey
  • 1 tbsp paprika
  • 1/4 teaspoon salt
  • 1 can [14 ounces] stewed tomatoes, chopped
  • 1jalapeƱo pepper, chopped
  • 1/3 cup chopped Monterey Jack or Cheddar Cheese
  • 1/4 cup chopped parsley
  • 8-oz packaged bow or bottle opener shaped whole wheat pasta

  1. Prepare pasta according to the package instructions. Drain and put in a large bowl.
  2. Heat the oil in a medium to high heat cauldron. Add green onions and garlic and cook for 30 seconds.
  3. Ground beef is broken. Sprinkle with chili powder and salt. Cook, stir for about 5 minutes, or until the beef is no longer pink.
  4. Add tomatoes and their juices and jalapeno sauce. Boil at high temperatures. Reduce heat to medium; cover and cook for 5 minutes.
  5. Pour the sauce on the pasta.
  6. Sprinkle with cheese and parsley. Toss and mix.
